The place and its round

It was in Iguerande, Awaranda in Gaulish, a place ‘bordered by waters’, in the depths of their mists, that Marie-Pierre and Michel Troisgros began to imagine the Colline du Colombier in 2004. In 2017, the Maison Troisgros took root in Ouches, a vast estate with the Bois sans feuilles*** at its heart, where César is now the chef. The deeper and more sincere the roots, the freer and more vital the forms they inspire. In turn, Lisa Roche and Léo Troisgros have chosen this countryside where everything changes and nothing changes.

On the local boundary map drawn with a delicate hand around the estate are La Grande Terre and La Terre des Riaux, small streams that crisscross the woodland. A landscape sewn together with 'bouchures' – as these living hedges are called in the Charolais-Brionnais , a patchwork of walls of local 'pisé', in this place everything evokes calm and an enduring sense of lasting peace. Depending on the season, you can appreciate the landscape where ponds and streams sparkle, observe the Charolais cattle returning to their pastures, the flowering fruit trees, the Burgundy snail festival, the walk to celebrate the Vin Gris.......and all through the year, walks along the banks of the Loire and its ' canal tranquille' which flows between Roanne and Digoin.
