It was in Iguerande, Awaranda in Gaulish, a place ‘bordered by waters’, in the depths of their mists, that Marie-Pierre and Michel Troisgros began to imagine the Colline du Colombier in 2004. In 2017, the
Maison Troisgros took root in Ouches, a vast estate with the Bois sans feuilles*** at its heart, where César is now the chef. The deeper and more sincere the roots, the freer and more vital the forms they inspire. In turn, Lisa Roche and Léo Troisgros have chosen this countryside where everything changes and nothing changes.
